ingredients: (Makes 12)
Pastry sheets - 2(Thaw for 5 hours)
Egg - 6 (Hard boiled and deshelled)
Onion – 4 small / 2 big (Thinly sliced )
Ginger - 1 piece (Crushed)
Green chilly – 2 (Finely chopped)
Curry leaves
Tomato – 1 small piece
Turmeric powder - ½ tbsp
Coriander Powder - 1½ tbsp
Chilly Powder - ½ tbsp
Garam Masala - ¾ tbsp
Salt
Oil
Egg (For egg-wash)
Maida / All purpose flour
Steps:
Heat oil in a pan.
Add onion, ginger, green chilly and curry leaves. Saute well.
Once the onion becomes soft, add turmeric powder and sauté well till the raw smell goes.
Add coriander powder and sauté well till the raw smell goes.
Add chilly powder and sauté well till the raw smell goes.
Add salt, garam masala and tomato and mix well.
Cover and cook on low flame til tomato is done.
The masala for the filling is ready. Set aside.
Beat an egg and set aside.
Add 1 tbsp maida and some water to a pan. Cook stirring till the mixture thickens.
Let it cool.
Take a pastry sheet.
Cut at the fold.
Cut each fold into 2 pieces.
Apply a layer of the maida paste on one end.
Place one spoonful of masala in the center of each piece.
Halve the egg.
Take one half and place it on the masala.
Bring together and seal the edges.
You can fold in any shape.
Line a butter paper on a baking tray and place it on the tray.
Apply the beaten egg on top of the puffs.
Bake it at 375°F/185°C for 20 minutes or till the top turns golden.
Enjoy the egg puffs.
